Parker Steaks and Scotch to Open in Trumbull Center

It's owned by a Trumbull native.

There's a newcomer to Trumbull Center.

Parkers Steaks and Scotch is scheduled to open in May in the building formerly housing Dunkin' Donuts, a video store and Courtesy Carpet.

According to a press release, owner Patrick J. Fahy, owner of the Parker Eatery & Bar in Stratford, said, "I am very excited to be part of the ongoing revitalization of Trumbull Center. The property owners have made amazing renovations to the building we will occupy and have provided me with a tremendous opportunity.”

He added, “It is a great feeling to open a business in the Town where I grew up, and Trumbull officials have been more than cooperative in helping us with every phase of this project.”

Trumbull's Economic Development Director Ed Lavernoich deferred comment to First Selectman Tim Herbst. Economic and Community Development Commission Chairman Scott Wich was not immediately available for comment.

The property is on the west side of Trumbull Center, which used to house a video store, carpet store and Dunkin' Donuts. The owners "have invested millions of dollars in capital improvements to rehabilitate the center," Herbst said.

Fahy said the restaurant will have "an upscale but casual feel and will serve quality food, great wine, and an endless selection of scotch.”

Fahy said the restaurant will feature a "beautifully built covered patio for outdoor dining."

Herbst said recent investments made to Trumbull Center are part of an overall strategy that is attracting new tenants and new interests to Trumbull’s downtown. 

“As I meet people throughout our community, time and again I hear then say there is a need for more restaurants in Trumbull.  The addition of Parker’s Steak and Scotch to Trumbull will be one of three restaurants that will open in Trumbull this spring alone.  I am very pleased to have another quality restaurant in Trumbull. This commitment by a Trumbull-grown entrepreneur is a validation of the recent renovation work that the Trumbull Center ownership has undertaken,” according to Herbst.

“Trumbull residents have made their entrepreneurial mark throughout the region; it is a great thing when one of them comes back to Trumbull to make a business investment, and I hope we can convince others to do the same.”
